Table Talk: Deceptive Foods

Over the weekend, my friend Krystal let me borrow a book for moms with children (or husbands) who are picky eaters. I am super blessed because my husband will eat almost anything! And Corbin is on a breast milk-only diet, so he doesn’t have a choice now. But I know one day we’ll wrestle with the vegetable issue. I’m getting prepared early.

The book, Deceptively Delicious is written by Jessica Seinfeld. You can check out the website here. She does a great job of coming up with simple recipes that have a unique twist: all have puréed vegetables hidden in them! For example, she has a recipe for Banana and Peanut Butter muffins that also have 1/2 cup of cauliflower purée in it. Gross, right? Not really. She alleges you can’t taste the vegetables inside these delicious recipes. Time will tell.

I planned out the next two weeks of menus for me and my fam using her cookbook and a few recipes I already had on hand. This morning, I made Jay pancakes that had 1/2 cup of sweet potatoes inside. And he liked them! (this is a big victory because my husband hates sweet potatoes.) I think the root is lodged somewhere in a family story about a deceptive “pumpkin” pie. That’s a story for another time.

The pancakes were less fluffy than the ones we normally make, but with a serving of sweet potatoes in it, this recipe is sure to become a favorite!

I love the book because I could make almost all the recipes listed with the ingredients I already had in my pantry. It frustrates me when recipes are labeled as “easy” but yet I can’t pronounce several ingredients. Maybe I’m just a lazy cook. Who’s to say?
